Servings: 4 (hearty servings)
1 1/2 cups shredded cooked chicken (use planned leftovers from Greek Chicken)
2 teaspoons chili powder
1 Tablespoon olive oil
1 Tablespoon lime juice
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/8 teaspoon ground red pepper
1/2 teaspoon salt
1 red bell pepper
1 green bell pepper
2 teaspoons olive oil
3/4 cup chopped frozen (thawed) onion
1 cup 2% sharp cheddar cheese
(8) corn tortillas
1/4 cup cilantro or parsley
non-stick cooking spray
Combine lime juice, olive oil, and spices in a small bowl. Set aside.
Heat oil in a large nonstick skillet over medium heat. Add onion and bell peppers; sauté 10 minutes or until onion mixture begins to brown.
Remove from skillet and set aside. Increase heat to medium high. Put chicken in skillet and add 2 Tablespoons water, sprinkle with lime
juice/spice mixture; toss and cook for 2-3 minutes, or just until barely heated through. Remove from pan (ok to put on plate with peppers and
Wipe out skillet. Place 4 tortillas on cutting board and divide the cooked vegetables, chicken, cilantro and cheese between them. Top with the
remaining 4 tortillas.
Spray your skillet with cooking spray. Carefully add 1 quesadilla to pan; cook 1 minute on each side or until golden. Remove from pan, and
repeat with remaining quesadillas. Slice into desired wedges.
