These kid friendly meatloaves are sure to become a family favorite. And they are already pre-portioned, so
there is no guessing Plan on those not following Weight Watchers to eat two!

1.5 pounds lean ground beef
1 large egg, lightly beaten
1/4 cup quick-cooking oats
1/4 cup finely chopped fresh parsley
2 tablespoons ketchup
3 tablespoons low-fat milk
1 medium sweet onion, finely chopped (3/4 cup)
3/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 1/2 teaspoons Worcestershire sauce
3 ounces part skim mozzarella, cut into 16 cubes
2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 teaspoons prepared mustard
Preheat oven to 375°F. Coat 8 muffin cups with cooking spray. Cut string cheese into 8 equal pieces (4 pieces per stick).
Mix egg, oats, parsley, 2 tablespoons ketchup, milk, onion, salt and pepper in a large bowl. Add beef and mix just until liquid
mixture is distributed.
Very lightly form the mixture into 8 loose balls and place in the prepared muffin cups. Lightly push two cubes of cheese into each
meatloaf. Combine the Topping ingredients and distribute evenly over the meatloaves.
Place the muffin pan on a baking sheet. Bake the meatloaves for 30-35 minutes. Allow to rest for 5 minutes. Line a cutting board
with 2 layers of paper towels and (with a large serving spoon) remove to paper towels to absorb any extra fat. There very possibly
will be none.
- Don't pack the meatloaf tightly into the cups. They will be more tender if only loosely packed.
- An alternative option is to mix 1/2 bbq sauce and 1/2 ketchup where ketchup is called for in the recipe.
- These sometimes spill over the muffin tin. Place muffin tin on a foil lined cookie sheet for easy clean-up.
